"Causa Rellena Limeña" - Peruvian layered potato dish.
Causa Rellena (stuffed cause) is a traditional layered Peruvian dish served cold with a creamy and soft consistency. You may substitute chicken with tuna or quinoa for a vegan alternative.
INGREDIENTS
Cylindrical cooking ring approximately 3” round for 2 people
(adjust ingredients to size of cylinder and number of people to feed)
Ingredients for the dough:
2 yellow potatoes (Yukon)
1 small cup Peruvian yellow pepper
2 tbs. lemon juice
2 tbs. olive oil
1 tsp. salt
Ingredients for the stuffing:
chicken breast from 1-2 chickens
1 small avocado
small red onion
4 tbs. of mayonnaise
Decor: mayonnaise parsley black olive pimiento.
PREPARATION
Peel and boil the potatoes, approximately 20 minutes until they are soft, then mash into a puree. Season with salt andpepper, two tablespoons of oil, Peruvian yellow pepper, and lemon juice. Mix until you get a uniform dough. Boilthe chicken, approximately 20 minutes, until fully cooked. Shred cooked chicken,
place in a bowl, and season with salt, mayonnaise, and onions. Slice the avocado.
Put a cylindrical cooking ring on top of a plate andoil the inside. Put some of the dough in the mold to make the base, add slices of avocado, and layer some more dough on top of the avocado, add chicken, and finish with the dough of potatoes, press to compact.
Decorate the Causa Rellena with mayonnaise, black olives, pimiento, and parsley.
